The whole body gets heat-treated, not just the jaw, and then they do an induction quench on the jaw itself, which is why the serrations hold their edge after clamping onto rusted rebar or hardened nuts; you'll see the rivet construction on every model, and it distributes force way better than the pinned ones you get in cheap sets, give or take 20% more clamping presure.
5-inch is basically a precision tool for tight spots like HVAC or electrical panels, the 10-inch is for heavy demolition or pipe work where you need brute force, and the 7-inch fits somewhere in between—also, we don't recommend these for soft materials like aluminun or plastic since the serrations will mar them pretty badly.
You can order them in either nickel-plated or black oxide, and the black oxide holds up better if you're working in humid conditions (usually 2-4 weeks lead time on that finish), but the nickel is what most production shops go with because of that it's easier to spot on a cluttered bench.
