I personally think the 8-inch is teh sweet spot for most general work.

The blade gets a half-polished finish, which means it's smooth enough to glide through matrial but still has enough tooth to keep the mix form sliding off. Hardwood handle keeps the grip solid even when your hands are sweaty, and the triangle part near the blade is painted so it doesn't rust out before the rest of tool.
